Low Calorie Cucumber Soup For Weight Loss

Cucumber Soup

Ingredients Needed

2 large cucumbers
1 1/2 cups plain hung yogurt
3 tablespoons of lemon juice
1 small onion
1 garlic clove
1/3 cup fresh dill
1/4 cup parsley leaves
2 tablespoons tarragon leaves
1/4 cup olive oil
Salt and pepper to taste

Method Of Preparation:

Step One

The first step here again includes the chopping process. Your herbs should be roughly chopped so that you can get a chunky taste in the mouth. Other vegetables like onions, garlic and cucumber can be roughly chopped as they will be blended. However, do remember that you should take the seeds off the same. Also, considering this is a no cook soup, use all fresh herbs. If you don’t get fresh herbs, you can substitute it with something that is fresh.

Step Two

Blend together the vegetables here along with the yogurt to get a smooth and beautiful consistency. Check for lumps and if needed, you can strain the soup to get a more even texture.

Step Three

At this stage, you can now add all of your herbs along with the seasoning, which is salt and pepper, the extra virgin olive oil for additional taste and the lemon juice. You can increase or decrease the quantity of lemon juice based on the sourness of your yogurt. If the yogurt is already sour, you can reduce the quantity of the lemon juice.

Step Four

You can chill the soup in a refrigerator for about 1 hour. Right before serving, add some dill leaves on top and serve. You can serve it in either glasses or even a soup bowl. If you want to add a little more touch of health, just give a drizzle with extra virgin olive oil.
